Ingredients
1/2 ( 50g) cup oat flour
1/2 cup (50g) vanilla protein powder
2 tbsp unsweetened cocoa powder
1 tsp ground cinnamon
1/2 tsp baking powder
1/4 tsp baking soda
1/4 cup (60g) low-fat Greek yogurt
1/4 cup (60g) unsweetened applesauce
1/4 cup (60ml) unsweetened almond milk
2 egg whites
2 tbsp erythritol
1/2 tsp vanilla extract

Preheat your oven to 350°F (175°C) and line a muffin tin with 6 paper liners.
In a large bowl, whisk together oat flour, protein powder, cocoa powder, cinnamon, baking powder, and baking soda.
In a separate bowl, combine Greek yogurt, applesauce, almond milk, egg whites, sweetener, and vanilla extract until smooth.
Add the wet ingredients to the dry ingredients and mix until just combined. Pour the batter evenly into the lined muffin cups.
Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
Let cool for a few minutes before serving.
