Ingredients
4 boneless, skinless chicken breasts
Salt and pepper, to
taste
1 tbsp olive oil
For the Cranberry Sauce:
1 cup (100g) fresh or frozen cranberries
1/4 cup (60ml) water
2 tbsp honey or maple syrup
1 tsp fresh rosemary, chopped
1/4 tsp cinnamon
Zest of 1 orange

Direction
Season the chicken breasts with salt and pepper on both sides. In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook for 6-8 minutes on each side, or until golden brown and cooked through. Remove from skillet and set aside.
In the same skillet, add cranberries, water, honey or maple syrup, rosemary, cinnamon, and orange zest. Simmer over medium heat for 8-10 minutes, stirring occasionally, until the cranberries burst and the sauce thickens slightly.
Return the chicken to the skillet and spoon the cranberry sauce over each piece. Let the chicken simmer in the sauce for another 2-3 minutes to absorb the flavors. Serve warm and enjoy this festive dish!
