Ingredients
4 boneless, skinless chicken breasts
2 tbsp olive oil, divided
2 cups (60g) fresh spinach leaves, chopped
1/3 cup (50g) low-fat crumbled feta cheese
1 garlic clove, minced
Salt and pepper, to taste
Preparation
Direction
1.Heat 1 tbsp of olive oil over medium heat in a small skillet. Add the garlic and spinach, cooking until the spinach is wilted (about 2-3 minutes). Remove from heat, stir in the feta cheese, and season with salt and pepper. Set aside to cool slightly.
2.Preheat oven to 375°F (190°C). Using a sharp knife, cut a pocket into each chicken breast, being careful not to cut all the way through. Season the chicken breasts inside and out with salt and pepper.
3.Spoon the spinach and feta mixture into each chicken breast pocket. Secure with toothpicks if needed to hold the stuffing in place.
4.Heat 1 tbsp of olive oil over medium-high heat in an oven safe skillet. Add the stuffed chicken breasts and sear for 2-3 minutes on each side, until golden brown.

5.Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is fully cooked.
