Ingredients

  • 2 salmon fillets (about 6 oz /170g each)

  • 1 tbsp olive oil

  • 1/4 cup (60ml) freshly squeezed orange juice

  • 1 tbsp honey or maple syrup

  • 1 tsp orange zest

  • 1/2 tsp fresh ginger, grated

  • 1/4 tsp garlic powder

  • Fresh thyme or sage leaves, for garnish (optional)

  1. Preheat the oven to 400°F (200°C). Season the salmon fillets with salt and pepper, and place them on a baking sheet lined with parchment paper. Drizzle olive oil over the fillets

  2. In a small bowl, whisk together the orange juice, honey or maple syrup, orange zest, grated ginger, and garlic powder.

  3. Pour half of the orange sauce over the salmon fillets. Bake in the oven for 15-20 minutes, basting with more sauce halfway through, until the salmon is cooked through and flakes easily with a fork.

  4. Remove the salmon from the oven and drizzle with any remaining orange sauce.

  5. Garnish with fresh thyme or sage leaves if desired.
