3 cups (250g) rolled oats
1 1/2 tsp baking powder
1 1/2 tsp pumpkin pie spice
Pinch of salt
1 1/2 cups (360g) pumpkin puree (unsweetened)
1/2 cup (120ml) maple syrup or honey
2 large eggs
1 1/2 tsp vanilla extract
3/4 cup (180ml) milk (dairy or non-dairy)
3/4 cup (75g) fresh or frozen berries
3 tbsp pumpkin seeds

Directions
Preheat oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
In a large bowl, mix oats, baking powder, pumpkin pie spice, and salt.
In another bowl, whisk pumpkin puree, maple syrup, egg, vanilla, and milk until smooth.
Pour wet ingredients into the dry and stir until combined. Fold in berries and pumpkin seeds.
Spread the mixture evenly in the prepared dish.
Bake 25–30 minutes, until set and golden at the edges.
Cool completely before slicing into 9 squares.
TOP TIP: For natural sweetness and extra moisture, mash 1 ripe banana into the wet ingredients before mixing. It blends well with the pumpkin and spices while reducing the need for added sweetener.
