Ingredients

For the Meatballs:

  • 1 lb (455g) ground chicken

  • 1/4 cup (30g) grated zucchini

  • 1/4 tsp garlic powder

  • 1/4 tsp onion powder

  • Salt and pepper to taste

  • 1/2 cup (120g) no-sugar added marinara sauce

For the Mashed Cauliflower:

  • 2 cups (200g)cauliflower florets

  • 1 tbsp light butter

  • Salt and pepper to taste

  1. In a mixing bowl, combine ground chicken, grated zucchini, garlic powder, onion powder, salt, and pepper. Form into small meatballs.

  2. In a skillet over medium heat, lightly spray or add a small amount of olive oil. Add the meatballs and cook until browned on all sides, about 8-10 minutes. Pour in the marinara sauce and simmer for an additional 5 minutes until the meatballs are fully cooked.

  3. Steam the cauliflower florets until tender, about 10 minutes. Transfer to a bowl, add olive oil or butter, salt, and pepper, and mash until smooth.

  4. Plate the mashed cauliflower and top with chicken meatballs and marinara sauce.
