Ingredients
For the Meatballs:
1 lb (455g) ground chicken
1/4 cup (30g) grated zucchini
1/4 tsp garlic powder
1/4 tsp onion powder
Salt and pepper to taste
1/2 cup (120g) no-sugar added marinara sauce
For the Mashed Cauliflower:
2 cups (200g)cauliflower florets
1 tbsp light butter
Salt and pepper to taste

Direction
In a mixing bowl, combine ground chicken, grated zucchini, garlic powder, onion powder, salt, and pepper. Form into small meatballs.
In a skillet over medium heat, lightly spray or add a small amount of olive oil. Add the meatballs and cook until browned on all sides, about 8-10 minutes. Pour in the marinara sauce and simmer for an additional 5 minutes until the meatballs are fully cooked.
Steam the cauliflower florets until tender, about 10 minutes. Transfer to a bowl, add olive oil or butter, salt, and pepper, and mash until smooth.
Plate the mashed cauliflower and top with chicken meatballs and marinara sauce.
